This is a 72-hour CULTURE PROCESS natural processed coffee from the Catuai varietal, grown at 4400 feet in the Giri Patte block. The cherries had a Brix of 25.2 at harvest and were placed in stainless-steel fermenters after removing floaters. A specific strain of yeast and lactic acid bacteria was added for 72 hours of fermentation in a carbon dioxide-rich environment. Following fermentation, the coffee was moved to raised beds to dry slowly over 27 days with constant stirring.
